Chef Ronnie Murray works with Shoreham Port in an exciting step towards the opening of Port Kitchen

Chef Ronnie Murray has been visiting the Port Kitchen team as a consultant, granting us access to his menu design expertise and recipe building skills as we work towards our spring opening. He has even shared the recipe for that famous apple pie!

Chef Ronnie Murray has been visiting the Port Kitchen team as a consultant, granting us access to his menu design expertise and recipe building skills as we work towards our spring opening. He has even shared the recipe for that famous apple pie!


Alongside our General Manager Polly, Ronnie has been developing a fantastic menu for us, ready to hand over to our full-time Chef once they’re on board. This new colleague will have the opportunity to be trained by Ronnie on his menu and make it their own as well as leading us through a series of launch events and into full service.


The progress on the Port Kitchen build will have been noticed by anyone who’s crossed the lock gates at Shoreham Port recently. Although still a work in progress, you can begin to picture yourself sitting with a coffee, a bite to eat or a nice glass of wine, enjoying the view. But what you won’t have seen is all the developments going on behind the scenes, and the menu is arguably the most important part of this!


When Ronnie Murray isn’t running Peckham Manor, he has appeared on TV shows including ITV’s Cooking with the Stars, Great British Menu and Sunday Brunch. As someone who champions uncomplicated food, using fresh and well-sourced ingredients with a passion for sustainability, he seemed like our perfect match. He tells us about the process of working with Polly;


“The starting point was Polly’s vision for what she wants Port Kitchen to be, which has been very clear from the start, and the menu grew from there. The process has been really collaborative and an exciting opportunity to put my stamp on something. We did the menu development and tasting looking out at the boats coming in, minutes away from where the fish was landed, with all the comings and goings of a busy Port – if you can’t write a menu here, where can you?!”


Set within a working Port, and a certified EcoPort since 2013, sustainability and our impact on the environment are considered in every decision we make. This formed the foundation for the Port Kitchen development and will influence us at every stage, from the people we choose to work with, the suppliers we use and how we run our kitchen.
Port Kitchen is due to open in spring this year and we can’t wait to welcome our local community, as well as visitors from further afield. We’ll be serving fresh, local produce with vegetarian, vegan and gluten free options, fantastic coffee and a selection of alcoholic
